Grilled Hot Honey Chicken with Fresh Peach Salsa

This grilled hot honey chicken is the perfect summer dinner! It's sweet, spicy & savory all wrapped up in one! Featuring perfectly grilled chicken slathered with a delicious homemade hot honey sauce then topped with a refreshingly juicy fresh peach salsa.

Ingredients

For the chicken:

• 1½ lbs. boneless skinless chicken thighs or chicken breasts (about 4 breasts)

• Olive oil, to brush over the chicken

• Smoked paprika, to season

• Cumin, to season

• Salt, to season

• Black pepper, to season

For the hot honey sauce:

• 1 cup honey

• 4 garlic cloves, minced

• 1 Tbsp red pepper flakes

• 1 tsp smoked paprika

• 1 tsp salt

For the peach salsa:

• 3-4 large peaches, diced

• 1 large jalapeño, deseeded & finely diced

• ¼ cup red onion, diced

• ¼ cup chopped cilantro

• 1 lime, juiced (or more to taste)

• Salt, if needed

Instructions

• Make the peach salsa. Mix the diced peaches, jalapeño, red onion and cilantro together in a bowl. Squeeze the lime over the top and toss until it's coated to your liking. (Taste and adjust the lime juice or add salt to taste, if needed.)

  Cover and refrigerate until ready to serve.

• Make the hot honey sauce. Add the honey, minced garlic, red pepper flakes, smoked paprika and salt to a small pot or sauce pan on the stove. Heat over low heat, stirring frequently until it's just runny and warm. (You don't want to boil the sauce. I'll usually do this right before putting the chicken on the grill.)

• Preheat the grill. Preheat the grill (or grill pan) to medium-high heat and lightly oil the grates to prevent sticking.

• Prepare the chicken. While the grill heats, brush the chicken with olive oil on both sides then generously season with smoked paprika, cumin, salt and black pepper.

• Cook the chicken. Once hot, place the chicken on the grill and cook for 5-6 minutes per side (or until it reaches an internal temperature of 165 degrees).

  During the last 2-3 minutes, generously brush the hot honey sauce over both sides of the chicken. Transfer the chicken to a tray once done.

  (Alternatively, you can bake the chicken at 400 degrees for 20-22 minutes then brush them with the sauce.)

• Serve. Spoon the peach salsa over each chicken thigh/breast and serve with the remaining hot honey sauce on the side.

Meet Calliope!

Are you looking for a sweet, chill, older lady to share your space with? Calliope is your gal. She's the kind of older lady that carries candy in her purse and gives you money every time she sees you, not the kind that yells at cashiers and waitstaff...just FYI.

Calliope just turned seven years old and she's about 46lbs. Records from her previous owner have her listed as a German Shepherd mix - mixed with what, we don't know, but she's got an award-winning smile and perfect white socks on her front feet.

Calliope is a timid girl at first but it's understandable - if a dog isn't used a shelter setting, it can be overwhelming. It doesn't take much for her to warm up though and once she does, she's a love that has no problem rubbing all of her itchy spots all over you...and she has a lot of those. We're working on getting her allergies under control and they seem to be seasonal/environmental rather than based on diet/food.

Again, Calliope is just a chill, mature lady looking for a snugglebuddy. She likes her walks and likes investigating all of the different smells. She does well with other dogs but prefers to sort of do her own things. She previously lived with cats and did well with them too...again, just sort of did her own thing. We would prefer kids 12+ just because we don't know if she's ever been around smaller kids.

She hasn't shown much interest in toys while she's been here but that could change once she gets more comfy with her surroundings and all the new people...or she could just be a cute, decorative couch potato that rubs her face on you for scratchies.
